CABBAGE AND PEANUT SALAD

"I can do that," I said to myself as I read the recipe for cabbage and peanut salad that I found in Ina's recipe box. "I have cabbage, and I have peanuts, and I have some salad dressing." I get tired of green salad -- especially making green salad. Perhaps this would be a nice change.

Here's the recipe:
2 cups cabbage, shredded
1/2 cup peanuts, chopped
Use salad dressing of your choice (I think that means something in the family of mayonnaise or Miracle Whip.)
Garnish with maraschino cherries.

So, I shredded the cabbage, mixed in the chopped peanuts, and dressed with Miracle Whip. I didn't garnish.

"This is good," exclaimed Mike. "What is it?"

Great! A successful new/old salad option. I'm thinking it also has possibilities: a little shredded carrot, perhaps a little pineapple, maybe the dressing that I use on broccoli salad. Or maybe I should just leave well enough alone. KW

  1. Oh yum. Sounds tasty. My grandmother made a salad with peanuts and a dressing that she made herself. I can't remember what was in the dressing, but I remember the color & taste. It was a a salmon color, but I don't think it was thousand island dressing. It was tart and in my young mind (or maybe a suggestion from Grandma), it was peanut sauce.

    Adding pineapple to your salad sounds good. Pineapple goes well with cabbage.

  2. Hmmm...not a big fan of cabbage unless it is buried in a potsticker and hidden by soy sauce.

  3. Hallie -- Do you like shredded carrots? You could substitute carrots for cabbage.

    Your brother, Clinton, extols the virtues of cabbage. His family has switched from iceberg lettuce to cabbage, he says, even in tacos.

    Personally, I like raw cabbage but not all slaw dressings. I also like buttered cooked cabbage and I like it in stir fry mixes. I don't like saurkraut.
